Day 12

We are over halfway there!  The exhaustion and cravings are finally starting to leave, and I am feeling good.  JB and I both agree that we are sleeping really good on this cleanse.  It feels nice to be getting energy.  Also, I am loving all the new recipes and the fact that I am really in the groove now of cooking and eating at home.  I saw this as a breakfast post on a blog I follow, and decided it’s what we’d have for lunch today.  We ended up having it for lunch and dinner, we liked it so much.  I did change up a few things from the original recipe- I always do that.  And, in the original recipe, he makes it a breakfast dish by cracking an egg on top of the stew and covering it with a lid until the egg is cooked.  Sounds good to me!  But, since we were eating it for lunch and dinner, I left the egg out. 

Curried Okra Stew

Okra Stew

1 lb. of fresh okra, sliced into bite size pieces

1 can of coconut milk

1 medium onion

chopped cloves of garlic (to taste)

1tbsp of coconut oil

28oz. can of organic stewed tomatoes

1 bunch of organic kale

1 cup of chopped cabbage

1 ear of sweet corn boiled and separated from cob (if you have a corn allergy or are trying to loose weight, don’t eat corn on cleanse)

1 yellow squash or zuchini (I had neither so I left this out)

1tbsp of turmeric

1tbsp of curry (I use more)

2tsp of cumin

sea salt/pepper to taste

Cook chopped onion in coconut oil and add chopped garlic.  Pour coconut milk over onion/garlic and add stewed tomatoes and juice.  Mix well.  Throw in chopped veggies and spices.  Bring to a boil, then simmer on low covered for 30 minutes.  If you desire more of a soup consistency, instead of a thick stew, add a broth (veggie/chicken) or water until desired consistency is met.

    I had a really hard time finding coconut milk at Whole Foods. I found coconut water…where’s the milk?

    Also, if you want to use young coconuts (not the brown ones, the white ones), international markets tend to have them for way cheaper. The international markets on Pioneer Parkway (past Collins) in Arlington always have interesting produce, and I can usually find young coconuts there for about $1.25. After you punch a hole in the coconut and drain all the juice, my favorite stress-relieving way to open them is to wrap the coconut in a towel and bang it on my driveway. lol. But actually there is lot of effective and efficient ways to open a coconut and plenty of videos online. I have a friend who uses them almost every day so she is very quick and proficient, so I guess it just takes experience.

    It’s in a can usually, regular grocery stores sell it on the Asian aisle.

    Yes, I use young coconuts all the time. I don’t ever think the carton coconut water even comes close to tasting as good as the fresh juice from the shell. I dish out the extra $ at WF for them, but I need to go to the international market (I need seaweed!). The meat is so yummy too!!
